PUMPKIN LOAF

Mix the following ingredients - IN ORDER - and then fold into a well-greased 9 X 5 inch loaf pan. Bake at 325 degrees for 80 minutes.

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinammon
1/2 tsp ground cloves
3/4 tsp ground ginger
1/2 tsp nutmeg
3/4 cup granulated white sugar
2 eggs
1/4 cup corn syrup
1/2 cup oil (Crisco or Mazola)
1 cup canned pumpkin
1/2 cup raisins
1/2 cup chopped walnuts OR pecans

  1. Hi back at ya, CJ. For sure, let me know how the loaf turns out. It's great warm with a teeny bit of Becel Light on it. I'm not fond of cooking unless it's for company 'cuz I guess it's just boring for one. As I was coming home tonight, I thought "gee, it's almost time to wear my new coat!" so I'll have to get my daughter to get a picture.

    I like thae comment about turning your kitchen into a walk in closet! LOL
    My grandmother sold her stove as she ate out 3 meals a day. She only had a hot plate to make soup and tea in case she got sick...
    She was a great woman and I miss her lots.
