I took very early retirement from teaching in '06 and did some traveling in Europe and the UK before settling down to do some private tutoring. As a voracious reader, I have many books waiting in line for me to read. Tell me I shouldn't read something, and I will. I'm a happy, optimistic person and I love to travel and through that believe that life can be a continuous learning experience. I'm looking forward to traveling more some day. I enjoy walking, cycling, water aerobics & and sports like tennis, volleyball, and fastpitch/baseball. I'm just getting into photography as a hobby and I'm enjoying learning all the bits and bobs of my digital camera. My family is everything to me and I'm delighted to be the mother of two girls and the Gramma of a boy and a girl. I may be a Gramma, but I'm at heart just a girl who wants to have fun.

PUMPKIN LOAF

Mix the following ingredients - IN ORDER - and then fold into a well-greased 9 X 5 inch loaf pan. Bake at 325 degrees for 80 minutes.

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinammon
1/2 tsp ground cloves
3/4 tsp ground ginger
1/2 tsp nutmeg
3/4 cup granulated white sugar
2 eggs
1/4 cup corn syrup
1/2 cup oil (Crisco or Mazola)
1 cup canned pumpkin
1/2 cup raisins
1/2 cup chopped walnuts OR pecans

Hi back at ya, CJ. For sure, let me know how the loaf turns out. It's great warm with a teeny bit of Becel Light on it. I'm not fond of cooking unless it's for company 'cuz I guess it's just boring for one. As I was coming home tonight, I thought "gee, it's almost time to wear my new coat!" so I'll have to get my daughter to get a picture.

I like thae comment about turning your kitchen into a walk in closet! LOL
My grandmother sold her stove as she ate out 3 meals a day. She only had a hot plate to make soup and tea in case she got sick...
She was a great woman and I miss her lots.
